Super Spinach Salad

Ingredients

  • 2 cups packed fresh spinach
  • 1/2 cup cooked quinoa
  • 1/4 cup shredded carrots
  • 1/4 cup dried cranberries
  • 1/4 cup canned chickpeas (garbanzo beans)
  • 1/4 cup edamame (green soybeans)
  • 2 tablespoons pumpkin seeds
  • 1/4 cup ginger-miso dressing, or to taste

Instructions

  1. Combine spinach, quinoa, carrots, cranberries, chickpeas, edamame, and pumpkin seeds in a bowl; add dressing and toss to coat.
