Karen's Sui Choy Slaw

Ingredients

  • 5 to 6 medium carrots
  • 1 head sui choy
  • Sui Choy Slaw Dressing, recipe follows
  • Salt and freshly ground pepper
  • Snow pea shoots
  • Mesclun greens
  • 1/3 cup fresh orange juice
  • 1/4 cup cider vinegar
  • 2 tablespoons sugar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • Freshly ground black pepper

Instructions

  1. Grate 5 to 6 carrots into a large salad bowl. Slice 1 head of sui choy, and add to the bowl. Toss the carrot and sui choy with the sui choy slaw dressing, and add salt and pepper, to taste. Lay the slaw over a bed of snow pea shoots and mesclun greens.
  2. Whisk together all ingredients in a small bowl.
  3. Yield: about 1 cup
