Jicama, Cucumber and Chile Slaw

Ingredients

  • 1 English cucumber
  • 1 (1/2-pound) piece jicama
  • 4 medium carrots
  • 5 tablespoons lime juice
  • 6 tablespoons chopped fresh cilantro sprigs
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon pepper flakes

Instructions

  1. Seed cucumber and peel jicama. Cut cucumber, jicama, and carrots into 1 1/2-inch-long thin strips. Toss vegetables together with remaining ingredients and season with salt and pepper.
