Homemade Chicken Stock

Ingredients

  • Leftover chicken parts including backs, necks and bones
  • 2 carrots, chopped
  • 1 celery stalk, chopped
  • 1 bay leaf
  • 3 peppercorns
  • 1 onion, peeled and halved
  • 8 cups water

Instructions

  1. In large pot combine chicken, carrots, celery, bay leaf, peppercorns, onion. Add water and bring to a simmer. Skim off fat forming at top. Cook for 2 - 3 hours. Strain. Freeze or refrigerate.
