Bruschetta with Sundried Tomato and Mozzarella
Ingredients
- 8 (1/2-inch) thick slices Italian bread
- 2 tablespoons olive oil (preferably extra-virgin)
- 1 garlic clove, halved
- 1/4 cup chopped sun-dried tomatoes in oil
- 1/4 cup mozzarella, cubed
- 1 tablespoon fresh basil leaves, minced
- 1 1/2 teaspoon balsamic vinegar

Instructions
- Toast the bread slices on a baking sheet in the upper third of a preheated 500 degree oven for 4 minutes, or until they are golden. While the toasts are warm, brush both sides of the toasts with the oil and rub them with the garlic. In a bowl combine the tomatoes, mozzarella, basil, balsamic vinegar, and salt and pepper to taste and top toasts with the mixture.;
