Ingredients

  • cooking spray
  • 3/4 cup all-purpose flour
  • 1/2 cup white sugar
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 5 tablespoons vegetable oil
  • 1/2 teaspoon vanilla extract
  • Frosting:
  • 2 1/2 cups confectioners' sugar
  • 4 ounces vegan margarine (such as Earth Balance®)
  • 4 ounces shortening
  • 2 tablespoons coconut milk
  • 1/4 cup crushed chocolate sandwich cookies (such as Oreo®)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a doughnut pan with cooking spray.
  2. Mix flour, sugar, cocoa powder, baking soda, and salt together in a bowl. Stir in water, vegetable oil, and vanilla extract until batter is smooth. Pour batter into the doughnut pan.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 10 to 12 minutes. Invert onto a wire rack and let cool, about 10 minutes.
  4. Combine confectioners' sugar, vegan margarine, shortening, and coconut milk in a large bowl; beat with an electric mixer until frosting is fluffy and smooth.
  5. Spread frosting over donuts; sprinkle cookie crumbs on top.
