Valerie's Irish Coffee

Ingredients

  • 2 tablespoons hot water
  • 1 tablespoon brown sugar
  • 1 shot Irish whiskey
  • 2 to 2 1/2 shots hot espresso
  • Lemon-Vanilla Whipped Cream, recipe follows
  • 1 1/2 cups heavy cream, chilled
  • 2 tablespoons sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon grated lemon zest

Instructions

  1. Combine the hot water and brown sugar in a mug. Stir together until the brown sugar is melted. Stir in the whiskey and espresso. Top with several dollops of the whipped cream. Serve immediately with a spoon.
  2. Add the heavy cream, sugar, vanilla and lemon zest to a stand mixer fitted with the whisk attachment. Whip just until soft peaks form.
