Best Recipe for Unique Healthy Chili
Ingredients
- 1 (15 ounce) can pumpkin puree
- 1 (15 ounce) can kidney beans, drained
- 1 (15 ounce) can garbanzo beans, drained
- 1 (15 ounce) can black beans
- 1 (15 ounce) can whole kernel corn
- 1 (14.5 ounce) can canned diced tomatoes
- 1 cup chopped onion
- 2 jalapeno peppers, chopped
- 2 tablespoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon ground cayenne pepper
- 1 cup water
- 1 1/2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
- 1 dash salt
Instructions
- Combine pumpkin puree, kidney beans, garbanzo beans, black beans, corn, diced tomatoes, onion, jalapeno peppers, oregano, garlic powder, and cayenne in a large pot. Simmer over medium heat, about 40 minutes.
- Stir water, chili powder, cumin, black pepper, and salt into the pot. Reduce heat to low, cover, and simmer until flavors combine, about 20 minutes.
