Ingredients

  • 2 teaspoons olive oil
  • 1 small yellow onion, chopped
  • 3 cooked burgers (3 ounces each), crumbled
  • 3 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cloves
  • Salt, to taste
  • 8 to 10 flour tortillas
  • Guacamole, homemade or store bought, to serve
  • Salsa or pico de gallo, homemade or store bought, to serve
  • Grated Monterey Jack or Cheddar, to serve

Instructions

  1. For the filling: Heat the oil in a deep skillet over medium heat. Add the onions, and saute until golden, 2 to 3 minutes. Add the meat, tomato paste, cumin, coriander, paprika and cloves. Stir well to mix. Season with the salt. Reduce the flame to medium-low. Cook for 15 minutes.
  2. Meanwhile, heat the tortillas on a grill. Wrap them in a towel to keep them warm.
  3. To serve, bring the tortillas, guacamole, salsa, cheese and meat filling to the table, and serve them family style.
