Tuscan Baked Tomatoes

Ingredients

  • 1 1/4 cups chopped parsley
  • 3 small cloves garlic, finely chopped
  • Pinch red pepper flakes
  • 3/4 cup bread crumbs
  • 10 plum tomatoes (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • Coarse salt and freshly ground black pepper
  • 1/2 cup water

Instructions

  1. Heat oven to 400 degrees F. In the bowl of a food processor, combine the parsley, garlic, red pepper flakes, and bread crumbs. Set aside.
  2. Cut the tomatoes in halves lengthwise. Remove the seeds and juice. Using a spoon, fill the halves with the bread crumb mixture. Place tomato halves in a shallow baking dish. Drizzle with olive oil and season with salt and pepper. Add 1/2 cup water to the bottom of the pan. Cover tightly with aluminum foil. Bake until the tomatoes are tender, about 45 minutes.
  3. Remove from oven. Heat oven to broil. Remove aluminum foil and broil until crisp and slightly browned, 2 to 3 minutes.
