Tuscan Baked Tomatoes
Ingredients
- 1 1/4 cups chopped parsley
- 3 small cloves garlic, finely chopped
- Pinch red pepper flakes
- 3/4 cup bread crumbs
- 10 plum tomatoes (about 1 1/4 pounds)
- 1/4 cup olive oil
- Coarse salt and freshly ground black pepper
- 1/2 cup water

Instructions
- Heat oven to 400 degrees F. In the bowl of a food processor, combine the parsley, garlic, red pepper flakes, and bread crumbs. Set aside.
- Cut the tomatoes in halves lengthwise. Remove the seeds and juice. Using a spoon, fill the halves with the bread crumb mixture. Place tomato halves in a shallow baking dish. Drizzle with olive oil and season with salt and pepper. Add 1/2 cup water to the bottom of the pan. Cover tightly with aluminum foil. Bake until the tomatoes are tender, about 45 minutes.
- Remove from oven. Heat oven to broil. Remove aluminum foil and broil until crisp and slightly browned, 2 to 3 minutes.
