Ingredients

  • 1 ounce absinthe
  • 1 sugar cube
  • 3 ounces chilled water

Instructions

  1. Special equipment: an absinthe spoon
  2. Pour the absinthe into a rocks glass. Lay an absinthe spoon across the rim of the glass and set the sugar cube atop the spoon.
  3. Slowly pour the water over the sugar cube, allowing the sugar to dissolve into the glass.
  4. Stir lightly with the absinthe spoon. Serve without ice, neat.
