Toasted Ginger Papaya

Ingredients

  • 1/3 cup honey
  • 1 tablespoon fresh ginger, finely chopped
  • 2 medium papayas, quartered and seeded (skin on)
  • 1 long spray canola oil cooking spray

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a small bowl, combine honey and ginger until well blended. Coat papaya flesh (but not skin) with honey mixture.
  3. Spray a nonstick cookie sheet with canola oil cooking spray. Place papayas skin side down on cookie sheet. Bake for 15 minutes or until golden brown. Serve warm.
