Toasted Almond and Orange Couscous

Ingredients

  • 1 Tbs. olive oil
  • 1 medium onion, chopped
  • 1 cup couscous
  • 1 tsp. turmeric
  • 1 cinnamon stick
  • 1 whole clove
  • 1 cup fresh orange juice
  • 1 Tbs. orange zest
  • 3 scallions, thinly sliced
  • 1/2 cup toasted, slivered almonds
  • salt and pepper

Instructions

  1. Heat olive oil in a saucepan and add chopped onion. Saute until soft. Add orange juice, orange zest, turmeric, clove and cinnamon stick. Bring to a boil. Stir in couscous, cover and turn off heat. Let sit covered for 5 minutes. Remove lid and fluff with a fork. Gently stir in almonds and scallions.
