Thyme Smoked Chicken Breasts
Ingredients
- 6 chicken breast halves, skin intact
- 1/2 bunch fresh thyme, tough stems removed
- salt and pepper to taste
- olive oil for coating chicken

Instructions
- Loosen skin on each chicken breast on one side and tuck a few sprigs of thyme underneath. Season with salt and pepper and rub chicken breasts with oil. Arrange chicken pieces on rack one inch apart, skin-side up, to allow for smoke circulation. Smoke on medium heat for 10 minutes per half pound. Remove from smoker, garnish with fresh thyme and serve.
