Ingredients

  • 2 cups mashed sweet potatoes
  • 1 1/4 cups white sugar
  • 6 tablespoons butter, softened
  • 1/2 cup evaporated milk
  • 2 eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Topping:
  • 3/4 cup crushed cornflakes cereal
  • 1/2 cup chopped pecans
  • 1/2 cup brown sugar
  • 6 tablespoons butter, melted

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Mix sweet potatoes, white sugar, softened butter, evaporated milk, eggs, cinnamon, and nutmeg together with a mixer in a bowl. Transfer to a baking pan.
  3. Bake in the preheated oven until top is golden brown, about 25 minutes. Remove souffle from oven; reduce heat to 325 degrees F (165 degrees C).
  4. Mix cornflakes, pecans, brown sugar, and melted butter together in a bowl with a spoon. Spread topping over souffle; bake in the preheated oven until topping is toasted, about 20 minutes.
