Best Recipe for Tangy Feta Mashed Potatoes

Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 1/2 (4 ounce) package crumbled tomato and basil feta cheese (such as Athenos®)
  • 1/4 cup butter
  • 1/4 cup milk
  • 1 tablespoon coarsely chopped capers
  • 1 clove garlic, minced
  • salt and ground black pepper to taste

Instructions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain.
  2. Mix feta cheese, butter, milk, capers, garlic, salt, and pepper into the potatoes. Mash with a potato masher or electric mixer to desired consistency.
