Tabbouleh

Ingredients

  • 1/2 cup coarse bulgur
  • 2 cups chopped flat-leaf parsley
  • 2 medium tomatoes, chopped
  • 2 Kirby cucumbers, peeled, seeded, and chopped
  • 1 scallion, finely chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice

Instructions

  1. Pour 1 cup boiling water over bulgur with 1/4 teaspoon salt in a bowl. Cover and let stand until tender, 20 to 30 minutes. Drain in a sieve, pressing to remove excess liquid.
  2. Toss bulgur with remaining ingredients, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a bowl.
