Sunny's Sambal and Pineapple-Glazed Bacon

Ingredients

  • 1/2 cup dark brown sugar
  • 4 ounces canned crushed pineapple, drained
  • 1/4 cup sambal oelek
  • Kosher salt
  • 12 strips thick-cut bacon
  • Coarse freshly ground black pepper

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Mix together the brown sugar, pineapple, sambal and a nice pinch of salt in a small bowl. Set aside.
  3. Line a baking sheet with parchment paper and lay the bacon strips on top; sprinkle with pepper. Bake until most of the fat is rendered, 8 to 10 minutes. Use paper towels to blot as much excess fat as possible.
  4. Put a wire rack on a baking sheet and lay the bacon on top. Brush the glaze over the bacon. Bake until the pineapple bits are golden brown and the bacon is crisp, 2 to 3 minutes. Let cool for a few minutes before serving.
