Steak Tartare
Ingredients
- 2 pounds filet mignon, diced*
- 1/2 small red onion, finely diced
- 2 tablespoons capers, drained
- 1 tablespoon chopped fresh parsley
- 1 tablespoon Dijon mustard
- 2 tablespoons olive oil
- 2 teaspoons Worcestershire sauce
- 2 teaspoons hot sauce (recommended: Tabasco)
- 1 large egg yolk
- Kosher salt and freshly ground black pepper
- Grilled country bread, for serving

Instructions
- Place the filet mignon in the bowl of a food processor and pulse just until ground. Transfer to a chilled bowl. Mix in the onions, capers, parsley, Dijon, oil, Worcestershire, hot sauce and egg. Season with salt and pepper. Serve immediately with grilled country bread.
