Slow Cooker Chicken Chipotle Tacos
Ingredients
- 2 pounds bone-in chicken breasts OR thighs, skinned
- 1 onion, roughly chopped
- 1 package (3 tablespoons) Spice Islands® Gourmet Taco Seasoning
- 1 to 2 teaspoons Spice Islands® Chipotle Chile Powder
- 1 can (14-1/2 ounces) diced tomatoes
- 12 tortillas
- As desired, shredded lettuce, diced tomatoes, shredded cheese, sour cream, guacamole, etc.

Instructions
- Place chicken in a large 5 or 6-quart slow cooker. Top with onions, taco seasoning, chipotle and tomatoes (undrained). Cover and cook for 3 to 4 hours on HIGH or 4 to 6 hours on LOW until chicken is very tender and can be easily pulled apart. Shred chicken pieces using two forks. Discard bones. Serve in tortillas with favorite toppings.
