Roasted Red Pepper, Pepper Jack, and Pepperoni Sandwiches

Ingredients

  • 1 round loaf sourdough bread (about 7 inches in diameter)
  • 1 cup grated pepper Jack cheese (about 1/4 pound)
  • 1/2 cup fresh coriander sprigs, washed, spun dry, and chopped
  • 16 slices pepperoni
  • two 7-ounce jars roasted red peppers, drained and patted dry

Instructions

  1. Preheat oven to 375° F.
  2. Cut eight 1/2-inch-thick slices from center of sourdough loaf. In a small bowl toss together pepper Jack and coriander.
  3. Make sandwiches on bread with pepperoni, roasted peppers, and cheese mixture. Bake sandwiches on a baking sheet in middle of oven until cheese is melted, about 5 minutes.
