Roasted Radishes

Ingredients

  • 8 ounces radishes
  • 2 tablespoons olive oil
  • Kosher salt and freshly ground black pepper
  • 1/2 lemon, juiced

Instructions

  1. Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil.
  2. Halve the radishes lengthwise and place them in a bowl. Toss with the olive oil and season with salt and pepper.
  3. Transfer the radishes to the prepared baking sheet and bake until tender and a little golden, about 20 minutes. Sprinkle the lemon juice on top and serve immediately.
