Roasted Pineapple
Ingredients
- 1 large pineapple
- 1/2 cup brown sugar
- 1 tablespoon ground ginger

Instructions
- Cut the skin off the pineapple and then slice the pineapple into quarters. Cut the quarters in half, lengthwise.
- In a medium bowl, mix the brown sugar with the ginger. Add the pineapple pieces and toss in the ginger-brown sugar mixture. Place the pineapple pieces in a medium casserole dish and broil for 10 minutes. Serve warm.
