Roasted Pesto Potatoes
Ingredients
- 3/4 cup store bought pesto
- 1 1/2 pounds red potatoes, cut into 1 " chunks

Instructions
- Preheat oven to 400 degrees. In a large bowl, toss together the pesto and the potatoes. Spread the potatoes out on a baking sheet. Bake for 45 minutes or until crispy and golden. Serve hot.
