Roasted Cherry Tomatoes with Mint

Ingredients

  • 1 pint cherry or grape tomatoes (12 ounces)
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 teaspoons finely chopped fresh mint

Instructions

  1. Preheat oven to 425°F.
  2. Toss tomatoes with oil, salt, and pepper in a small baking pan and roast in middle of oven until skins just begin to split, 5 to 10 minutes.
  3. Sprinkle tomatoes with mint.
