- 1/2 cup unseasoned rice vinegar
- 2 tablespoons mirin (Japanese sweet cooking sake)
- 1 teaspoon toasted sesame oil
- 2 teaspoons sugar
- 1 teaspoon finely minced shallot or green onion
- Salt and pepper
