Red Pepper Chutney with Mint and Almonds

Ingredients

  • 1/2 large red bell pepper, seeded and coarsely chopped
  • 20 large fresh mint leaves or 30 small leaves, coarsely chopped
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, coarsely chopped
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon coarse salt
  • Freshly ground black pepper
  • 1 tablespoon chopped slivered blanched almonds
  • 1 teaspoon chopped fresh dill

Instructions

  1. In a blender combine red pepper, mint, lemon juice, cayenne, salt, and black pepper. Puree until smooth. Add almonds, and blend again. Transfer to a bowl, and stir in the dill.;
