Red Pepper Chutney with Mint and Almonds
Ingredients
- 1/2 large red bell pepper, seeded and coarsely chopped
- 20 large fresh mint leaves or 30 small leaves, coarsely chopped
- 2 tablespoons fresh lemon juice
- 1 garlic clove, coarsely chopped
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon coarse salt
- Freshly ground black pepper
- 1 tablespoon chopped slivered blanched almonds
- 1 teaspoon chopped fresh dill

Instructions
- In a blender combine red pepper, mint, lemon juice, cayenne, salt, and black pepper. Puree until smooth. Add almonds, and blend again. Transfer to a bowl, and stir in the dill.;
