Red Beans and Greens Salad

Ingredients

  • 1 cup chunky prepared salsa, such as chipotle salsa
  • 2 tablespoons extra-virgin olive oil, eyeball it
  • 1 head escarole, chopped into small bite size pieces
  • 1 (14-ounce) can red kidney beans, drained
  • 1/2 red onion, chopped
  • Salt and pepper

Instructions

  1. Combine salad ingredients in a bowl, toss and adjust seasoning.
