Ingredients

  • 1 ounce ginger root, peeled and minced
  • 4 ounces mirin
  • 1 ounce soy sauce
  • 2 1/2 pounds mahi-mahi, cut into 1/2-inch cubes
  • Oil, for frying
  • 7 ounces flour
  • 7 ounces water
  • 3 ounces soy sauce
  • 1 teaspoon sugar
  • 2 eggs
  • 1/2 teaspoon baking soda
  • 1 teaspoon garlic powder
  • Seasoned flour, as needed
  • 20 ounces sweet and sour sauce

Instructions

  1. Combine ginger, mirin, and soy sauce and marinate the fish for 30 minutes. Preheat oil in a deep-fryer to 350 degrees F.
  2. Mix together batter ingredients.
  3. When preparing an order, drain and dredge fish cubes in seasoned flour. Coat fish with the batter and deep-fry until golden brown.
  4. In a bowl, gently toss one portion of fried fish with 4 ounces of hot sweet and sour sauce. Serve immediately on a warmed dinner plate.
