Ingredients

  • 2 carrots, cut into strips
  • 1 small sweet red onion, cut into strips
  • 1 red bell pepper, cut into strips
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons balsamic vinegar

Instructions

  1. Arrange the carrots, onions and bell peppers on a plate. Mix together the olive oil and vinegar in a small bowl and serve with the vegetables.
