Pink Applesauce

Ingredients

  • 8 McIntosh apples, or other tart, red-skinned apples
  • 2/3 cup freshly squeezed lemon juice (about 4 lemons)
  • 1 cup water
  • 1/4 cup sugar

Instructions

  1. Quarter the apples and remove the seeds and cores. (Do not peel.) Place them in a bowl, add the lemon juice and toss thoroughly to coat.
  2. Place the apples, water, and sugar in a heavy saucepan. Cover pot and let simmer over low heat for about 30 minutes, or until the apples breakdown to a sauce-like consistency.
  3. Remove from the heat, uncover pot, and allow the apples to cool slightly. Gently push the apples through a food mill or wire sieve using a rubber scraper. Discard the skins. Refrigerate until ready for use.
