Petite Filet with Wasabi Cream

Ingredients

  • 3/4 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons heavy cream
  • 2 tablespoons prepared wasabi
  • 1 clove garlic, grated
  • Salt and freshly ground black pepper
  • 3 petite filet (shoulder tender) steaks
  • Olive oil, for drizzling
  • Salt and freshly ground black pepper

Instructions

  2. For the wasabi cream: Combine the sour cream, mayonnaise, cilantro, heavy cream, wasabi, garlic and salt and pepper to taste in a bowl. Chill for 2 hours.
  3. For the petite filet: Preheat the oven to 425 degrees F.
  4. Heat a cast-iron skillet over medium-high heat until hot. Drizzle the steaks with olive oil and season with salt and pepper. Add the steaks to the skillet and sear quickly, about 1 minute per side. Transfer the skillet to the oven and roast for 5 minutes.
  5. Serve with the wasabi cream.
