Perfect Steak
Ingredients
- 2 (2 1/2-inch) boneless New York strip steaks (about 1 1/2 pounds each)
- 2 tablespoons olive oil
- Coarse salt and freshly ground black pepper

Instructions
- Prepare a charcoal or gas grill, arranging the coals for direct cooking. Lightly spray the grill rack with vegetable oil spray. The coals should be quite hot.
- Drizzle both sides of the steaks with olive oil and season with salt and pepper.
- Place the steaks on the prepared grill, and cook about 8 minutes per side for rare, 10 minutes per side for medium rare. (Let the meat rest 1 to 2 minutes before cutting.)
