Perfect Steak

Ingredients

  • 2 (2 1/2-inch) boneless New York strip steaks (about 1 1/2 pounds each)
  • 2 tablespoons olive oil
  • Coarse salt and freshly ground black pepper

Instructions

  1. Prepare a charcoal or gas grill, arranging the coals for direct cooking. Lightly spray the grill rack with vegetable oil spray. The coals should be quite hot.
  2. Drizzle both sides of the steaks with olive oil and season with salt and pepper.
  3. Place the steaks on the prepared grill, and cook about 8 minutes per side for rare, 10 minutes per side for medium rare. (Let the meat rest 1 to 2 minutes before cutting.)
