Pears Poached in Red Wine
Ingredients
- 1 2-inch section cinnamon stick
- 3/4 cup sugar
- About 4 cups (to cover) deeply colored, tannic, young red wine
- 4 firm, not quite ripe eating pears, peeled, stems left intact

Instructions
- In a pot or saucepan of a size to just contain the pears, combine the cinnamon, sugar, and red wine. Arrange the pears, adding more wine to cover, if necessary. Bring to a boil, and adjust the heat to a simmer, lid ajar. Cook for about 20 minutes, or until a skewer encounters little resistance when pierced to the heart of a pear. With a slotted spoon, remove the pears from their liquid and stand them upright, in a glass dish. Simmer the red wine until reduced to the consistency of a light syrup--and pour it over the pears. Serve at room temperature or chilled.;
