No-Cook Tomato Sauce with Penne

Ingredients

  • 12 ounces penne
  • 1/4 cup virgin olive oil
  • 6 tomatoes, diced
  • 3 tablespoons balsamic vinegar
  • 3 cloves garlic, minced
  • Fresh basil, chopped
  • Grated Parmesan cheese

Instructions

  1. In a large pot of boiling
  2. In a large pot of boiling salted water cook penne according to package directions. In a large bowl combine tomatoes, garlic, olive oil and vinegar. Toss together with basil. When tender, drain penne, add to bowl and toss to coat. Serve with fresh Parmesan cheese
