Ingredients

  • 8 ounces graham crackers, crushed
  • 4 ounces granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 stick (8 tablespoons) unsalted butter, melted
  • 7 large egg yolks
  • 28 ounces sweetened condensed milk
  • 2/3 cup freshly squeezed key lime juice
  • 1 teaspoon cornstarch

Instructions

  1. For the crust: Combine the graham cracker crumbs, sugar and cinnamon in the bowl of an electric mixer. Mix on low, slowly adding the melted butter. Mix for 1 minute.
  2. Remove from the mixer and, with your hands, press into an 8-inch pie plate to form a pie shell. Cool in the refrigerator for 30 minutes.
  3. Preheat the oven to 250 degrees F.
  4. Whip the egg yolks in the bowl of an eclectic mixer until just stiff, then add the sweetened condensed milk. Whip for 2 more minutes.
  5. In a small bowl, whisk together the lime juice and cornstarch, making sure not leave any lumps: The mixture should be nice and smooth. Fold the lime mixture into the egg yolk mixture. Pour the mixture into the pie shell.
  6. Bake until set, about 30 minutes.
