Mixed Chicories Salad

Ingredients

  • 1 pound mixed chicories (endive, radicchio, curly endive, frisee, dandelion)
  • Warm Apple Thyme Dressing, recipe follows
  • 2/3 cup apple cider vinegar
  • 1 Granny Smith apple, cored, peeled, and finely chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon chopped fresh oregano leaves
  • 1/2 teaspoon chopped fresh thyme leaves

Instructions

  1. Trim, wash, dry, and break up the chicories. Just before serving, dress the greens with the apple-thyme dressing. Serve 1 large handful per plate.
  2. Combine all ingredients in a small saucepan, and boil until juices are slightly thickened and apples are soft but not broken down, 3 to 5 minutes. Store dressing, tightly covered, in the refrigerator for up to 3 days. Yield: 3/4 cup
