Mixed Chicories Salad
Ingredients
- 1 pound mixed chicories (endive, radicchio, curly endive, frisee, dandelion)
- Warm Apple Thyme Dressing, recipe follows
- 2/3 cup apple cider vinegar
- 1 Granny Smith apple, cored, peeled, and finely chopped
- 2 tablespoons fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon chopped fresh oregano leaves
- 1/2 teaspoon chopped fresh thyme leaves

Instructions
- Trim, wash, dry, and break up the chicories. Just before serving, dress the greens with the apple-thyme dressing. Serve 1 large handful per plate.
- Combine all ingredients in a small saucepan, and boil until juices are slightly thickened and apples are soft but not broken down, 3 to 5 minutes. Store dressing, tightly covered, in the refrigerator for up to 3 days. Yield: 3/4 cup
