- 1 tablespoon tamarind concentrate (available at many ethnic markets)
 - 2 to 3 tablespoons sugar
 - 1 cup water

- Mix concentrate, sugar, and 1/3 cup of water in a blender until smooth. Blend in remaining 2/3 cup of water.
