Just-Add-Water Instant Grits with Coconut and Cherries
Ingredients
- 1/3 cup instant grits
- 2 tablespoons coconut milk
- 2 tablespoons dried cherries
- 2 teaspoons pistachios, roughly chopped
- 1 1/2 teaspoons light brown sugar
- Pinch ground cardamom
- Pinch ground ginger

Instructions
- Special equipment: an 8-ounce lidded heat-safe container
- Put the grits, coconut milk, cherries, pistachios, brown sugar, cardamom and ginger in the container. Secure the lid, and refrigerate up to overnight.
- When ready to eat, add 1/2 cup boiling water, stir gently and cover until the grits are tender and creamy and the cherries have plumped up, about 2 minutes. Stir again, and eat warm.
