Italian Bagel Caprese
Ingredients
- 4 bagels, assorted flavors
- 1 package Stracchino or Crescenza cheese (or substitute another very soft cow's milk cheese)
- 2 ripe tomatoes, sliced
- 1/2 red onion, sliced, optional
- 12 fresh basil leaves
- Sea salt, for topping

Instructions
- Slice the bagels in half horizontally and slather the bottom cut sides with the Stracchino cheese. Top with the sliced tomatoes, onions if using, basil leaves and sea salt. Top with the bagel lids and serve.
