Herbed Couscous

Ingredients

  • 2 cups couscous
  • 2 cups water
  • 1 tablespoon butter
  • Salt and pepper
  • 1/2 bunch scallion, finely sliced
  • 1/4 cup fine diced Spanish onion
  • 1 to 2 tablespoons rice wine vinegar

Instructions

  1. Bring water, 1 tablespoon salt, and butter to a boil. Add couscous, remove from heat and stir quickly and thoroughly. Cover for 5 minutes. Moisture will be absorbed. Fluff with a fork. Add scallions, Spanish onion and rice wine vinegar.
