Ingredients
- Sugar
- Maldon sea salt
- 1 ounce tequila
- 1/2 ounce lemon juice
- 1 sea urchin fillet

Instructions
- Combine equal parts sugar and water and simmer for 20 to 30 minutes. Cool.
- Line a pousse-cafe (shooter) glass with salt.
- Combine the tequila, lemon juice and 1/2 ounce simple syrup in a cocktail shaker. Shake.
- Serve over the sea urchin fillet in the prepared glass.
