Grilled and Smoked Tomato Relish

Ingredients

  • Hickory chips, soaked in water
  • 8 plum tomatoes, halved
  • 1/3 cup diced shallots
  • 1/4 cup capers
  • 3 tablespoons red wine vinegar
  • 1/3 cup chopped fresh basil
  • 1/4 cup extra virgin olive oil
  • Salt and pepper

Instructions

  1. Place smoking chips in a stovetop smoker. Add the tomatoes and cook for about 7 minutes. Chop into small dice and mix in bowl with remaining ingredients and season to taste.
