Grandma Bundy's Ice Cream

Ingredients

  • 60 marshmallows
  • 3 (14 ounce) cans evaporated milk, divided
  • 1 quart heavy whipping cream
  • 3 cups milk
  • 1 cup white sugar
  • 2 tablespoons vanilla extract
  • 1 tablespoon lemon extract
  • 1 pinch salt

Instructions

  1. Heat the marshmallows with 1 can evaporated milk, stirring occasionally, in a saucepan over low heat until the marshmallows are melted, 10 to 15 minutes. Stir remaining evaporated milk, cream, milk, sugar, vanilla extract, lemon extract, and salt into the marshmallow mixture.
  2. Freeze in an ice cream maker according to manufacturer's directions until it reaches soft-serve consistency.
