Goose Crackling
Ingredients
- Skin and fat from goose
- 2 cups water

Instructions
- Cut fat and skin into 1-inch wide strips and a few inches long. Place the fat in a hot pan and sprinkle with salt. Add the water and skim the foam that rises to the top. Boil until the water is completely evaporated.
- Strain the goose fat and reheat the pan to a medium high heat. Stir fry the fat strips for about 10 minutes, until golden brown. Remove and strain on paper towels.
