Gazpacho with Herbs and Chiles

Ingredients

  • 4 cups tomato juice
  • 1 red onion, finely chopped (about 2 cups)
  • 1 cucumber, halved, peeled, seeded, finely chopped (about 1 1/2 cups)
  • 1 red bell pepper, finely chopped (about 1 cup)
  • 1 yellow bell pepper, finely chopped (about 1 cup)
  • 2 tomatoes, seeded, finely chopped (about 1 cup)
  • 1/4 cup Champagne vinegar or white wine vinegar
  • 1 1/2 tablespoons chopped seeded jalapeño chile
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon chopped fresh parsley
  • 1 garlic clove, minced
  • 3/4 teaspoon hot pepper sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Mix all ingredients in large bowl. Cover and chill until cold, at least 2 hours. (Can be made 2 days ahead. Keep refrigerated.)
