Fingerling Potato Chips

Ingredients

  • 1 pound medium fingerling potatoes
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 2 tablespoons coarse black pepper
  • 2 tablespoons freshly chopped cilantro leaves
  • 2 cloves garlic, minced
  • Vegetable oil, for frying

Instructions

  2. Preheat oil to 350 degrees F.
  3. Thinly slice the potatoes and place in a bowl.
  4. In a large bowl, combine the paprika, salt, pepper, cilantro, and garlic, and set aside.
  5. Add the potatoes to the hot oil. Fry in batches until golden brown and crispy, about 2 to 4 minutes.
  6. Remove the chips from the oil, drain on paper towels and toss in the bowl with the seasoning.
