Farmhouse Roasted Potatoes

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon dried parsley
  • 1/2 teaspoon salt
  • 1 pound petite potatoes
  • 1 pound bacon, cut into 1-inch pieces
  • 1 onion, sliced
  • 1 cup freshly grated Parmesan cheese
  • 1/2 lemon, zested

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Mix olive oil, garlic powder, parsley, and salt together in a large bowl; add potatoes and stir until coated. Mix bacon and onion into potato mixture. Spread potato mixture onto a baking sheet.
  3. Roast in the preheated oven until potatoes are tender and crisp, about 30 minutes. Toss potatoes with Parmesan cheese and top with lemon zest.
