Farmer's Salad

Ingredients

  • 1 preserved lemon, chopped
  • 1/4 cup olive oil
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon honey
  • Kosher salt and freshly ground black pepper
  • 1 bunch fresh salad greens
  • 3 mini bell peppers, sliced
  • 1 cup goat's milk feta, crumbled
  • 1 cup hazelnuts, toasted and chopped

Instructions

  2. Whisk together the preserved lemon, olive oil, parsley, honey and some salt and pepper in a large bowl. Add the salad greens, bell peppers, feta and hazelnuts, toss together and serve.
