Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 1/2 tablespoons finely chopped shallot
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon coarsely ground black pepper
  • 1/2 lb summer lettuces such as baby red oak, Bibb, and baby romaine (12 cups total)

Instructions

  1. Whisk together oil, shallot, lemon juice, salt, and pepper in a large serving bowl.
  2. Just before serving, add lettuces to dressing and toss to coat.
