Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons finely chopped shallot
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon coarsely ground black pepper
- 1/2 lb summer lettuces such as baby red oak, Bibb, and baby romaine (12 cups total)

Instructions
- Whisk together oil, shallot, lemon juice, salt, and pepper in a large serving bowl.
